WAIT! KEEP READING! I know… I said… RAW and VEGETABLE. I feel like I’ve led you on with the last post about white chocolate bark and now I’m smacking you in the face with a raw vegetable salad. It’s so delicious though. And let’s be real, you and me both know we need more veg in our lives and this is straight up wellness in a bowl. I made a big pile of this treat and kept it in the fridge for a few days. That way, every time I reached for a snack I wasn’t having cheese and crackers for the 2398523 time that week.
Really, it’s your world with how you want this to go down (mine was inspired from here).
I combined:
2 cans of drained and rinsed chickpeas
0.5 cups of halved cherry tomatoes
Half of a red pepper finely diced
Half of a yellow pepper finely diced
One bunch of scallions sliced
0.25 sliced kalamata olives
Small bunch of parsley chopped
2 cloves garlic minced
I then poured the juice of a 1.5 lemons over the vegetables as well as a drizzle of olive oil. Season with salt /pep. I served with a piece of crispy salmon.
