White Chocolate Cranberry Blondies

I think we all know I am usually not pleased with the pastry selection at Starbucks.  I have to acknowledge, however; the cranberry bliss bar.  And since Starbucks convinced me to like one of their baked goods (something I usually avoid) I had to recreate it and one-up them.  So here is a recipe for “White Chocolate Cranberry Blondies” which are shockingly similar to a cranberry bliss bar… without the 4 months of freezer time I’m sure the Starbucks version gets before being sold to you.

I made these for Friendsgiving and they were quite the delightful treat.  The primary difference between this version and the Sbux one is that I did not add any orange flavoring and that mine are better.

You’ll need:

For base-

1.5 sticks butter, cubed

1.5 cups packed light brown sugar

2 large eggs

0.75 teaspoon vanilla extra

2.25 flour

1.5 teaspoons baking powder

0.25 teaspoon salt

0.25 teaspoon ground cinnamon

0.5 cup dried cranberries

6 ounces white baking chocolate, chopped (I used Ghirardelli)

For Frosting-

1 package softened cream cheese (seriously softened, leave at room temp for a lifetime)

1 cup powdered sugar, sifted

6 ounces white baking chocolate, melted (I just chop, place in cup, microwave for 20 seconds, stir, microwave for 20 more seconds, stir, done)

0.5 cup dried cranberry, chopped

Melt butter, stir in brown sugar.  Let cool to room temp.

Beat in eggs and vanilla.  In a separate bowl whisk flour, baking powder, salt and cinnamon.  Add dry ingredients to wet ingredients.  Stir in cranberries and white chocolate.

Batter will be insanely thick.  It will be fine.

Spread into a 13X9 baking dish that you have greased with butter.  Bake for 18-20 minutes at 350 degrees.  Let cool to room temp.

Beat cream cheese and powdered sugar.  Add half of the melted white chocolate.  Frost.

Sprinkle with cranberries.  Drizzle with remaining melted white chocolate (I melted three ounces of the white chocolate, used that in the frosting, frosted and topped with cranberries then melted the remaining white chocolate to drizzle over).  Refrigerate.

Cut into desired shapes.  Keep refrigerate until serving.
