I am in Fargo, ND. I am very far from anything resembling tabbouleh. My kitchen withdrawals have me day dreaming about the meals of my past one of which is this quinoa salad. Why this specific meal of my past haunting me? Two reasons:
1.)This tabbouleh dominates. It has way more herbs and veg than other recipes I’ve tried, tastes delicious and overall makes me feel like a superhero for consuming so much veg in so tasty a way.

You’ll need:
1 cup quinoa (your world you pick which kind)
1 pint cherry tomatoes
1 red pepper, chopped
1 english cucumber, seeded and diced
1 bunch curly parsely, chopped
10 mint leaves, chopped
1 small red onion, diced
4 cloves garlic, minced
2 lemons, juiced
0.25 cups olive oil
0.5 teaspoon dried oregano
Splash of white or red wine vinegar (can leave out)
Salt/pep
Cook the quinoa according to the package (yes you really have to rinse the quinoa). Toss quinoa with rest of ingredients. TADA. HEALTHY SNACK FOR THE WEEK READY TO GO. Trust me, make a big batch. This is one of those salads you’ll want to IV to your arm. It’s one of those salads I find almost impossible to get sick of no matter how much I consume of it… which says a lot.
